Keto Sausage Balls
Sausage Balls make a fantastic appetizer or breakfast, but the ones I used to make were full of carbs. So, I started working on creating the perfect keto Sausage Ball Recipe. Most of the ones I tried were extremely dry, like give me a gallon of water right now before I can take another bite dry. So, I started experimenting from scratch to see if I could create a recipe that was both moist and flavorful.
My first attempt was a thumbs down. Then, I remembered my delicious keto biscuit recipe. I thought I might be able to tweak that recipe to make keto-friendly sausage balls. I was right! They turned out perfectly! Due to the added moisture content when using keto-friendly flours, they are more like Keto Sausage Ball Puffs than perfectly round balls, but the taste is spot on!

Are Sausage Balls Keto Friendly?
Traditional Sausage Balls are not keto-friendly, but this low carb version is perfect for a ketogenic or low carb diet.
What Kind of Sausage Do I Use?
Look for a breakfast sausage, which crumbles like ground beef when you brown it. Make sure to check the label and choose the lowest carb count you can find. Avoid the maple variety as it is generally higher in carbs.

- Cookie Sheet

To start this recipe line a baking sheet with parchment paper and preheat the oven to 365 degrees.
Tip: Before combining the melted butter and eggs, make sure the melted butter is cooled a bit so that the heat from the butter doesn’t begin to scramble the eggs.
Keto Sausage Balls without Almond Flour
You’ll notice that the batter is very thick once you add the coconut flour. That is normal. It is very absorbent, so don’t be alarmed.
I use coconut flour in all my recipes because my oldest daughter is allergic to almonds. I don’t personally notice a coconut flavor, but if you are particularly sensitive to coconut, you can sub almond flour. They are not 1:1 substitutions for each other. Instead, the conversion is one part coconut flour equals four parts almond flour.
I’ve had several people ask why I precook the sausage. I have always preferred sausage balls this way, even before following a keto diet. Otherwise, I never felt like the sausage was cooked through when added to the batter raw.
You’ll want to chill your batter for a bit before baking if you want a rounder shape. They tend to be more or a Keto Sausage Ball Puff if the butter and sausage are still hot when added to the batter. Chilling the batter will help them not to flatten.
Tip: Since you aren’t rolling these out like more traditional sausage balls, I recommend using a cookie scoop. It is super fast and works perfectly for this recipe. Plus, cleanup is much easier than using your hands to roll them into balls.

Variations to Keto Low Carb Sausage Balls:
- Sub almond flour for coconut flour (4x as much as they are not interchangeable)
- This recipe calls for cheddar cheese, but you could swap for another variety.
- You can substitute cream cheese for the sour cream in this recipe. Both add a bit more moisture to the Keto Sausage Balls recipe
- Instead of using a baking sheet lined with parchment paper, you could use a mini muffin pan instead.

How to Make Keto Sausage Balls Recipe:
Keto Sausage Balls Recipe {Low Carb}
Ingredients
- 1 lb breakfast sausage browned and drained (can use mild or hot)
- 4 1/2 tablespoons of butter melted and cooled
- 1/3 cup coconut flour
- 2 tablespoons full fat sour cream
- 4 eggs
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 2 cups sharp shredded cheddar cheese shredded
Instructions
- Preheat oven to 365 degrees and grease a cookie sheet.
- Combine melted butter (I cool mine by popping the bowl in the fridge for 10 min), eggs, salt, and sour cream, then whisk together.
- Add coconut flour and baking powder to the mixture and stir until combined.
- Add drained browned sausage.
- Stir in cheese then refrigerate the batter for ten minutes. If your batter is still warm at all after 10 minutes the sausage balls will flatten when baked so you may need to refrigerate longer. They don't form perfect balls when they bake they are more like "puffs."
- Drop batter by tightly packed spoonfuls on greased cookie sheet. I made 36.
- Bake for 15-18 minutes or until tops are slightly brown.

Yes, you can freeze them either way. I prefer to scoop them out on a cookie sheet. Then flash freeze them. Next, I add them all to a zip lock bag and I can pull out as many as I want at a time and bake them.

I am not sure. Those are the only two that I generally see in keto recipes. I have heard of lupin flour but not sure if it would work.

Just curious, why would I not use uncooked sausage? I used to make great (non-keto) sausage balls that tastead just like a McD’s sausage biscuit. (It was just meat bisquick and cheese.) I mixed it all up with the raw meat and made balls of that and baked them 30-40 minutes. Why is it necessary to cook the meat before baking these? Tia 😊 (I wonder how the meat does not get over cooked.)

I have never liked sausage balls when you use uncooked sausage. They seem very greasy to me and the sausage seems uncooked. I prefer them this way, but you are welcome to change up any recipe to your preference.
