How to make keto & low carb casseroles
Casseroles are so easy to make and are the ultimate comfort food! For me, casserole dishes bring back memories of homecoming twice a year at my grandmother’s church, where all the ladies in the church made their very favorite casserole dishes, which were all fantastic.
I never mind making a casserole because of how easy they are to throw together. I love how I can swap out different types of meats and veggies each week!
Since we started following a ketogenic diet, I keep our meals so much simpler. A casserole to us has become a complete dinner. Sometimes we pair a nice garden salad with leafy greens, and sometimes we just eat the casserole for dinner.
I quickly realized how easy it is to transform many of the traditional carb-heavy casseroles into a delicious low carb version without sacrificing flavor!
1. Choose your protein
Although not ALL casseroles need a protein, it will help to keep you full without adding many carbs to your dinner. Some different types of proteins you can add to your casseroles are:
- ground beef, turkey, pork or chicken
- shredded chicken, pork, beef or turkey
- seafood (shrimp, fish, scallops, crab)
- bacon
- sausage
- ham
- pork roll
- steak
When you have selected your protein, it is important to pre-cook your protein first. This is usually done in a skillet or cast iron pan with some fat. This is an essential step to building flavors in your casserole and also will make sure your protein is fully cooked and safe to eat before heating your casserole in the oven.
2. Choose your veggie
Vegetables in casseroles are great for fiber, nutrients, and added flavor. Make sure you use non-starchy vegetables so you can keep your carb count low. Here are some popular vegetables that are great in low carb casseroles:
- cauliflower (riced, mashed, roasted)
- broccoli (riced, mashed, roasted)
- zucchini (noodles aka “zoodles” or thinly sliced for layering)
- eggplant (cubed or thinly sliced for layering)
- leafy greens (kale, spinach, collard greens, swiss chard, bok choy)
- radishes
- cabbage
- brussels sprouts
- asparagus
- mushrooms
- green beans
This part is the most fun because you have so many choices and typically a lot of freedom with swapping them out. Cauliflower is one of the most popular keto veggies because not only is it low in carbs, but it can be made into “rice” or “mashed” and used as a delicious ‘foundation’ to place a lot of casseroles on top of. To replace noodles in traditional casseroles, use zucchini noodles instead! You can make your own or often purchase them already spiralized.
3. Choose your sauce
This is where the richness and FATS come into play. The keto diet is high in fat and sauces are a great way to incorporate them! Here are some sauce ideas you can use in between layers in your casserole or pour over the top of a layered dish:
- Alfredo (a thick cream-based sauce)
- Marinara (a simple tomato sauce)
- Pesto (healthy and full of flavor)
- Blush (tomato and cream)
- Cheese (any cheese with cream)
Some sauces go better with proteins than others, but they all are delicious options and can be used interchangeably! Heavy whipping cream is my go-to. It can be added to any casserole sauce and will easily increase your fat intake while making your dish rich, hearty, and super creamy!

Casseroles are a meal by itself, so most of them don’t NEED something on the side. With that said, you may want something else on the side or something to serve your casserole ON. Some popular keto sides you can serve with your casserole are:
- cauliflower rice
- creamy spinach
- Veggie Zoodles
- steamed broccoli
- side salad
- roasted Brussels sprouts
- southern green beans
How to make and store your casserole
Making casseroles in advance or the day before is such a huge time saver! Once it’s assembled, my worries quickly ease away as I know dinner is checked off of my ‘to-do’ list. When making your casseroles ahead of time, you want to cook and layer everything as the recipe states. Then cover your casserole dish with aluminum foil and keep cool in the fridge until your ready to heat it up.
If you have a creamy or cheesy casserole, be mindful of your tinfoil. If the casserole is filled high, your foil may stick to the sauce (or whatever is on top). To prevent this from happening, you can either spray some non-stick spray onto your foil before you cover it. Or you can insert some toothpicks into your casserole to keep the foil from touching it.
How to freeze casseroles for meal prep
Casseroles are great for meal prepping, especially while on the keto diet! However, they can be tricky to freeze if you do not follow the proper steps. Covering your casserole the proper way and making sure your casserole is thoroughly cooled before freezing are just a few tips I have. There are other factors you need to be aware of to make sure your casserole stays fresh without ruining the text or flavor of your food.
Tips for making casseroles low carb and keto-friendly
Here are some tips I have learned over the years to ensure your casseroles come out delicious and consistent every time:
- Don’t be afraid to swap out veggies or proteins from other recipes you find.
- Seasoning is your friend. Add any seasoning to your casserole if you want to spice it up or add more flavor.
- Replace the typical breadcrumb topping with carb-free pork panko for that extra crunch.
- Flour is used to thicken almost every sauce in a casserole. Finding a carb-free way to thicken your sauces is key. Using Xanthan gum, cream cheese, or reducing liquids in sauces helps to thicken them while keeping your meal keto-friendly.
- Use riced cauliflower in your casserole to “stretch” your casserole a little further. Doing this will make it more filling while allowing you to easily increase the serving size
- Precooking everything before assembling your casserole will ensure that everything is safely cooked. This way, you just need to worry about heating your casserole rather than cooking it. This saves time and stress.
- Substitute the starchy foods used in your traditional non-keto casseroles with cauliflower to make them keto-friendly.
- Be careful of store-bought sauces as they may have added sugars or flour. Read the labels carefully.
