HOW TO MAKE FARMHOUSE BBQ MUFFIN CUPS
These quick and easy Farmhouse BBQ Low Carb Muffin Cups are very similar to my Taco Cups with a little twist on the ground beef seasoning. They turned out amazingly delicious, and everyone loved them.
While the ground beef is browning, you can whip up a quick batch of BBQ Sauce. My homemade Sugar-Free Low Carb BBQ Sauce recipe takes this recipe up a notch and gives the ground beef an authentic BBQ flavor. If you don’t have time to make it, you can find sugar-free BBQ sauce online and possibly in your local grocery store, although it is not as tasty as the homemade version.

Ingredients:
- Ground Beef – I use 80/20 ground beef, but you can also use ground turkey.
- Homemade Sugar-Free BBQ Sauce – I love this keto-friendly BBQ sauce.
- Colby & Monterey Jack Cheese – The more cheese, the better.
- Coconut flour – An approved low carb flour.
- Sour Cream – Adds moisture to the batter for the biscuit part of the recipe.
- Eggs – Binds and holds the ingredients together.
- Herbs & Spices – Spices bring life to recipes and add incredible flavors!

Steps to making keto farmhouse bbq muffins:

Step 1: Brown 1 lb. of ground beef and drain.
Step 2: Add ground beef and 1 cup of sugar-free BBQ sauce to the skillet. Bring to a boil and simmer for 5 minutes, then remove from heat.
Step 3: Preheat oven to 400 degrees and grease a muffin pan. (I used parchment paper squares in the muffin tins to prevent sticking.) If you don’t use parchment paper squares, make sure to grease the muffin tins generously as coconut flour tends to be sticky.
Step 4: Combine melted butter (I cool mine by popping the bowl in the fridge for 5 min), eggs, salt, and sour cream, then whisk together and add the shredded cheese.
Step 5: Push the biscuit mixture up the sides and bottom of the muffin pan.
Tip: Spray fingers with cooking spray—Pat the batter around the sides of muffin tins to form a cup.
Step 6: Spoon in the ground beef mixture.
Step 6: Sprinkle freshly grated cheese on top of the bbq beef mixture, then bake.

Coconut Flour Tips
Low carb flours tend to be very sticky. Make sure to grease your muffin tin generously to keep the Farmhouse BBQ Low Carb Muffin Cups from sticking to the pan. Form the keto biscuit dough like a cup in the muffin tin with your fingers leaving room to fill with the ground beef mixture.
Can you make these eggs, cheese, and hamburger muffins ahead of time?
You can. This is a super simple recipe to meal prep. Once the ground beef is browned, add the tangy sugar-free, low carb BBQ sauce and simmer to incorporate all of the flavors. HOW TO STORE THESE MADE FROM SCRATCH BEEF CUPS
Store these beef cups in the fridge once baked. They should be good for 2-3 days after making them as long as you keep them in an airtight container. You can also freeze them for later by putting them in a freezer-safe container for later as well.

Quick & Easy Farmhouse BBQ Low Carb Muffin Cups {keto/low carb}
Ingredients
For the Filling:
- 1 lb ground beef
- 1 cup homemade Sugar-Free BBQ Sauce
- 3/4 cup Colby & Monterey Jack Cheese, grated

- ⅓ cup coconut flour
- 2 tablespoons sour cream

- 1 1/3 cup cheddar cheese, grated

Hi I’ve loved the standard recipe for BBQ muffins, but with type 2 diabetes, i want to try these. I also want to make them for my son’s group home. Can i use plain Greek yogurt in place of the sour cream?

I’ve only fixed the recipe as is. There are only 2 carbs per muffin. My son and one of my daughters are Type 2 diabetic and they do fine eating this but you need to do what you feel is best for your son.

We eat as a main dish, but if you prefer to enjoy as an appetizer that is up to you. This recipe uses a regular-sized muffin pan not a mini.

Can you substitute almond flour for the coconut flour? The coconut flour seems a bit sweet.

Yes, you would need 4x as much. 1/4 cup coconut flour equals 1 cup almond flour.

After reading the whole post, I can not find coconut flour listed as an ingredient…just comments on using parchment paper if using coconut flour. Your Taco Cup recipe does not use coconut flour either, but just wanted to make sure that it is not included in this recipe. Love all the great recipes!

I don’t mean to sound mean haha. But your first step by step instructions say to bake the egg mixture after you have patted it into place. BEFORE adding the meat. But your second(printable) instructions say to bake it all at once with the beef and the egg mixture. Which one is right?
And if I do bake it without the meat, is it 15 mins, then after adding the meat do I just heat it until the cheese is melted?
